Sodium Nitric
Purified sodium nitrite is a white or slightly yellowish crystalline powder. It is very soluble in water and hygroscopic. In air, it slowly oxidizes to sodium nitrate NaNO3. Is a strong reducing agent. Toxic.
Areas of use
Medicine and Biology
Sodium nitrite is also used in medicine and veterinary medicine as a vasodilator, bronchodilator (dilates bronchi), relieves intestinal spasms, is used as a laxative, and also as an antidote for cyanide poisoning.
Research is being conducted on its use in sickle-cell anemia, heart attacks and ischemia of the heart, aneurysms of the brain and pulmonary hypertension in children
Manufacture of food products
Used as a color improver and preservative in the food industry in meat and fish products. Food supplement E250.
As a food additive, it is used in the food industry for two purposes: as an antioxidant and as an antibacterial agent that prevents the growth of botulinum Clostridium — causative agent of botulism, — serious food intoxication caused by botulinum toxin, and a damaged nervous system.
Interaction with myoglobin (meat protein) gives meat products of characteristic pinkish color.
In the EU, food sales are permitted only in a mixture with edible salt with a nitrite content of about 0.6%, in order to reduce the risk of exceeding the daily rates. In 2013, similar rules are in force in Russia.
Food supplement E250. Potassium nitrite has similar properties — food additive E249.
Complies with GOST 4197-74 or TU 6-09-590-75 (grades OCCH 4-7-3).
